- 5 x 25g Vitabite® bars
- 75g marshmallow fluff
- 25g butter
- 30ml water
- ½ tsp. vanilla extract
- 140ml Prozero ‘double cream’
- 100ml ProZero®
- 63g Unsalted butter
- 8g Cornflour
Make ProZero ‘double cream’
- Place all the ingredients into a small saucepan and stir well over a gentle heat.
Keep stirring until the mixture starts to simmer and is thickened.
- Take off the heat and pour into a container and use a hand held blender to whisk for 30-40 seconds.
- Leave to cool and place in the fridge to chill for 3-4 hours, preferably overnight
To make the chocolate flavour mousse
- Place the Vitabite , butter, marshmallows, water and cocoa powder into a small saucepan.
- Place over a gentle heat and stir well. Keep stirring until the mixture is a smooth texture. Leave to cool.
- Add the vanilla extract to the ProZero ‘double cream’ and whip
until firm peaks form (ideally it needs to be whipped into a slightly thicker consistency than ‘double cream’).
- Gently fold the whipped ProZero ‘double cream’ into the smooth
- Divide over 3 glasses/bowls and place in the fridge until served.
- Garnish with remaining ProZero ‘cream’ and grated Vitabite or permitted fruit.
