A classic dessert using Vitabite. This recipe is low in protein. Always check with your dietitian that this is suitable for your diet. Free for MSUD.

Ingredients

  • 5 x 25g Vitabite® bars
  • 75g marshmallow fluff
  • 25g butter
  • 30ml water
  • ½ tsp. vanilla extract
  • 140ml Prozero ‘double cream’
  • 100ml ProZero®
  • 63g Unsalted butter
  • 8g Cornflour

Method

Make ProZero ‘double cream’

  1. Place all the ingredients into a small saucepan and stir well over a gentle heat.
    Keep stirring until the mixture starts to simmer and is thickened.
  2. Take off the heat and pour into a container and use a hand held blender to whisk for 30-40 seconds.
  3. Leave to cool and place in the fridge to chill for 3-4 hours, preferably overnight

To make the chocolate flavour mousse

  1. Place the Vitabite , butter, marshmallows, water and cocoa powder into a small saucepan.
  2. Place over a gentle heat and stir well. Keep stirring until the mixture is a smooth texture. Leave to cool.
  3. Add the vanilla extract to the ProZero ‘double cream’ and whip
    until firm peaks form (ideally it needs to be whipped into a slightly thicker consistency than ‘double cream’).
  4. Gently fold the whipped ProZero ‘double cream’ into the smooth
    Vitabite mixture.
  5. Divide over 3 glasses/bowls and place in the fridge until served.
  6. Garnish with remaining ProZero ‘cream’ and grated Vitabite or permitted fruit.
