This low protein pasta recipe is fantastic and fresh idea for a main meal and is also ideal to take to work or school to be eaten cold! This dish is exchange free and perfect for those on a low protein diet. Free for MSUD.

Ingredients

  • 80g Fresh Basil
  • 4 Garlic cloves, peeled
  • 8 tbsp Olive oil
  • 400g Low protein pasta

Method

Pesto:

  1. Put basil, garlic and olive oil in a blender or food processor and blitz until smooth.
  2. Season to taste.

Pasta:

  1. Cook the pasta according to packet instructions.
  2. Drain the pasta and put it back in the dry pan. Make sure that the pan is off the heat.
  3. Mix in pesto and serve.
