This low protein potato salad recipe is perfect for picnics, BBQs, lunches and dinners! This BBQ Sweet Potato Salad is free for MSUD and ideal for those on a low protein diet.

Ingredients

  • 50g Sweet potato, peeled and chopped into large chunks
  • 2 Baby corn, sliced
  • 25g Red onion, diced
  • 35g Mixed peppers, diced
  • 40g Mayonnaise
  • 1 tbsp BBQ sauce
  • 1 tsp Chives, chopped finely
  • Salt and pepper to taste

Method

  1. Boil the sweet potato for 6 minutes, then add Baby corn cooking for a further 3-4 minutes.
  2. Once cooked, drain and run under cold water.
  3. Once cooled, combine with remaining ingredients in a mixing bowl and serve.
