Top Tip!

This low protein waffle recipe is a delicious fruity twist on a classic! Drizzle with maple syrup or melted Vitabite for the perfect low protein breakfast. These Blueberry Waffles are free for MSUD and ideal for those on a low protein diet.

Ingredients

  • 120g Fate low protein all-purpose mix
  • ½ tsp Baking powder
  • 30g Granulated sugar
  • 14g Butter
  • 60ml Prozero
  • 40ml Water
  • 20g Blueberries, chopped

Method

  1. Rub together the Fate low protein all-purpose mix, baking powder, granulated sugar and butter in a bowl until you get a sand-like texture.
  2. Heat waffle maker as per manufacturer’s instructions.
  3. Mix Prozero and water in a separate bowl then add to dry mixture, combining to make a batter.
  4. Add the blueberries and mix well.
  5. Place batter in the waffle maker.
  6. Cook for 6-7 mins or until golden brown.
