- 250mls ProZero®
- 45g unsalted butter
- 25g cornflour
- Salt to season
- 10tsp lemon juice
- 6tsp chopped fresh chives
- Put the ProZero, butter and cornflour into a saucepan
- Place over a gentle heat and stir with a whisk until the mixture starts to simmer and thicken.
- Take off the heat.
- Pour into a tall plastic container and using a hand-held blender, blend for 30-40 seconds
Place into a suitable container and leave to cool, as it cools stir a couple of times. Cover and place in the fridge until chilled.
After chilling, stir in the salt, lemon juice and chives.
