Made with ProZero, this recipe makes a quick and easy smooth, rich ice cream. This recipe is low in protein. Always check with your dietitian that this is suitable for your diet. Free for MSUD.

Ingredients

  • 500mls of chilled ProZero whipping ‘cream’ (See recipe)
  • 90g caster sugar
  • 1-2 teaspoon vanilla essence or extract
  • Few drops of yellow food colouring (optional)

Method

Method by hand

  1. Pour chilled ProZero whipping ‘cream’ into a large bowl and whisk until light and airy.
  2. Add the sugar and vanilla essence/extract and stir well.
  3. Stir in a few drops of yellow colouring for a richer colour (optional).
  4. Taste and add more sugar to sweeten if desired.
  5. Pour the mixture into a large plastic freezer proof container and place in the freezer
  6. Leave for about an hour, or until it is quite firm and beginning to go solid around the edges.
  7. Remove from the freezer.
  8. Using a fork or wire whisk, quickly beat the ice cream to break up the ice crystals. Place the ice cream back in the freezer to refreeze for at least 3 hours

Method (by an electric ice cream machine)

  1. Pour the chilled ProZero whipping ‘cream’ into a large bowl and whisk until light and airy.
  2. Add the sugar and vanilla essence/extract and stir well.
  3. Stir in a few drops of yellow colouring for a richer colour (optional).
  4. Pour the mixture into the machine.
  5. Follow the instructions for your machine, and churn until the ice cream is thick and frozen.
  6. The ice cream can be eaten straight away or transferred to a suitable container and stored in the freezer.
